Devon Blue is an excellent blue cows milk cheese, which is wrapped in foil after a few weeks and left to mature for 6 – 8 months. It develops into a buttery rich yet moist and crumbly blue cheese, with a rounded depth of flavour.
An extra few month's of cheese maturing does wonderful things to this rich, rounded cheddar, producing a complex balance of flavours. Every truckle is handcrafted and cloth-bound by our team of nine expert cheesemakers.
